Fish sauce (Nam Pla i.e. Thai) is the most popular sauce in all of Thailand. Thais add this mild but tangy sauce to almost everything they eat, similar to the way Westerners use salt in cooking. Made by fermenting (boiling) aged, salted anchovies, this rich sauce will add new depth to your Thai cooking. Once cooked, it has a much more pleasant aroma than if you smell it straight from the bottle.
